Instead of reaching for a tin of beans to put on top of your toast, see if you can get more creative next time! For instance, try using some leftovers mixed with fresh ingredients… like so!

These photos are of my lunch yesterday that used the previous nights leftover fish curry with some fresh spinach and half a tin of chickpeas added to it and served on top of some gluten free spinach bread.

It was really yummy, satisfying and helped me get in more of my phytonutrients (plant nutrients), of which we need 9-12 a day from a mixture of the colour groups.

Many people asked on Instagram how I made the spinach bread, and on this occasion, I didn’t make it but I bought it from the Spinach King range that is sold at Wellness Warehouse in South Africa.
