Kale crips (or chips as they are often known) are really easy to make and can help you top up on your daily intake of green phytonutrient rich foods. These are often lacking in peoples diets so I am here today with an easy recipe to help change that! Your kids are even going to enjoy these too!

Ingredients

  • 1 bunch kale (washed, dried, stem removed)
  • 1 bunch bok choy (washed, dried, stem removed)
  • 2 tablespoons coconut oil
  • Herbamare® Original organic seasoning

Instructions

  1. Make sure the entire stem is removed from the kale (going right up to the top of the leaf), and the end stems only are removed from the bok choy, and make sure the washed leaves are completely dry.
  2. Shred the leaves up by hand into small pieces.
  3. Melt 2 tablespoons of coconut oil (if it is not already melted due to the weather outside). Add this to a bowl with 4 tablespoons of Herbamare® Original organic seasoning.
  4. Add the kale and bok choy to the bowl with the coconut oil and Herbamare in and mix. Ensure all the leaves are coated thoroughly.
  5. Line a baking tray with baking paper (optional) or simply use a non-stick baking tray (that is free of harmful chemicals), and spread the now coated leaves onto the tray. Ensure they are spaced out so they crisp.
  6. Cook on 100 degrees centigrade for 1 hour. Turning the tray and the leaves throughout to ensure they cook evenly and crisp up nicely. Keeping them spaced out on the tray at all times.
  7. Once the leaves are crispy, remove from the oven and enjoy with your next meal or store in a glass jar when they are cool. They will last for 3-4 days in an airtight container.

Bok choy is not a common one to use when making crisps (chips), and they do take slightly longer than kale to make so you could always just try making kale on their own at first if time is short.

Also, I would recommend making these in batch to help maximise the oven being on for so long. If you do enjoy them for instance, then you could make 2-3 trays full at one time. Saving you time, money and being better for the environment.
