You will love this easy to make plant-based 100% vegan waffle recipe that is also gluten-free!

This recipe started out as a pancake mix, but with a few tweaks, I had successfully made my very first plant-based vegan waffle in less than ten minutes! Although I am not a vegan I do try to eat lots of plant-based foods, and this recipe works well if you are a vegan or if like me you cannot eat eggs as they do not make you feel great.

Instead of eggs, I have used aquafaba to bind everything together. As a rule, every 3 tablespoons of aquafaba replaces 1 egg in a recipe. Aquafaba means ‘water-bean’ as the gooey-liquid from legumes in a tin, such as chickpeas, can be used to create a vegan, plant-based binder. Other legumes in tins can be used, however.

I am very happy with how my waffle recipe turned out, and the recipe makes a nice plain waffle (that is best enjoyed fresh out the waffle maker) leaving you to add your personal toppings to maximise enjoyment and flavour.

Ingredients

  • 2 cups brown rice flour
  • 1/2 teaspoon cinnamon
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups almond milk
  • 3 tablespoon coconut oil
  • 1 tablespoon avocado oil
  • 2 tablespoon water
  • 1 tablespoon vanilla extract
  • 6 tablespoons aqaufaba (I used chickpea)

Instructions

  1. Whisk together the dry ingredients.
  2. In a measuring jug, measure out 2 cups of almond milk. Add to that the coconut (you will need to melt it if it is solid), avocado oil, water and vanilla extract.
  3. Stir in the wet ingredients to the dry ingredients. Do not over mix. Having lumps is totally okay. Leave to the side for a few minutes.
  4. Heat up your waffle maker at medium-high heat.
  5. When the waffle maker is hot enough, add enough of the waffle mixture to cover the inside section. Do not fill too much so it overflows when you close the lid.
  6. Close the lid, and you will see the mixture fills the entire waffle maker space (creating the waffle edges).
  7. Cook until the waffle is totally cooked throughout, which is usually 4-6 minutes. Do not open too early as the waffle will break apart if it is not cooked yet and this will make it harder to remove later on.

Tip: Do not skimp on the coconut oil and avocado oil as the waffles need these types of ingredients to stop them sticking to the waffle maker.
