This is it. The dream. Where eating a delicious, creamy dessert helps you to reach your five servings of fruit and vegetables a day. It might be a new concept to some, but be prepared for more of these types of recipes featuring on my blog.

Give Plants A Chance

It can be overwhelming. I get it. The messages circulating about what to eat and what not to eat. That is why I am trying to write clear and simple messages on my blog, delivered in a gentle manor. Something that is rarely discussed in all of these ‘health’ messages is about the benefits of simply eating more fruit and veg, as there is still a large number of people not even reaching their target of at least five servings of fruit and vegetables a day.

Some research I have read has suggested that number needs to be revised, and should be closer to ten servings given the fact fruit and vegetables contain such low levels of nutrients these days.

Eat and Be Happy (Not Guilty!)

There are actually two types of fruit in this dairy free dessert recipe, those being raspberries and avocado. (Yup. Avocado is a fruit by definition!) And zero refined sugars. So here is your chance to eat something sweet and be satisfied, with zero guilt to boot!

Feeling guilty has no place to feature in your life, not when eating in any place, regardless of what recipe it is.

Raspberry, Coconut & Maple Syrup Dairy-Free Mousse Recipe

Yields: 6 desserts

Time to make: 10 minutes to make / 1 hour setting time

Ingredients:

  1. 220ml organic coconut cream
  2. 3 tablespoons of organic maple syrup
  3. 1 organic vanilla pod
  4. 1 punnet of organic raspberries
  5. 3 tablespoons of organic almond butter
  6. 1 ripe avocado (peeled, de-stoned and roughly chopped)

How to make my raspberry, coconut & maple syrup dairy free mousse recipe:

  1. Add all ingredients to a food processor. Whizz around until everything has been mixed well, stopping and stirring manually to ensure.
  2. Divide the mixture into 6 dessert glasses, and allow to set for 1 hour in the coldest part of the fridge (the bottom usually works well).
  3. Serve with berries or edible flowers.

A FEW TIPS: The only challenge in this recipe is the avocado. Some lumps can remain, even after the food processor has been used. To reduce the chances of this happening, chop the avocado as small as possible.
