Flourless leftover fruit crumble recipe

As a kid, I grew up excited for my mothers traditional Sunday dinner to be eaten, because then I knew it was crumble time! As someone who lives a gluten, refined sugar, and dairy free lifestyle – I am determined to prove to people this way of life is far from boring and can be very tasty!

One of my most favourite recipes that demonstrates this is today’s flour-less leftover fruit crumble. It is called ‘left-over’ crumble because if you have some fruits about to turn then they would be perfect for this dessert so they don’t get wasted and actually go off.

Also, this is a great recipe to throw your left over almond pulp into that you have from making fresh almond milk.

My favourite fruits to use are organic leftover apples and berries of all kinds, but you can also experiment – I used kiwi in this one and it worked out great!

**** You Will Need ***

  • 5 tablespoons of organic date syrup
  • 2 tablespoons of organic coconut oil
  • 1/2 teaspoon of organic cinnamon powder
  • 1 cup of organic quinoa flakes
  • 1 cup of left over almond pulp from making almond milk / or grind 1 cup of soaked almonds & grind in a blender
  • 4 tablespoons of organic fresh lemon juice
  • 3-4 cups of left over fruit, peeled, sliced and stoned
  • salt, pinch

*** How To Make ***

  1. To begin, preheat the oven to 200 degrees centigrade.
  2. Then, mix all the fruit in a shallow round baking dish (like pictured above), with 3 tablespoons of the date syrup.
  3. Next, mix the almond pulp, quinoa flakes, salt and cinnamon in a large baking bowl, and then add the remaining 2 tablespoons of date syrup and the 2 tablespoons of organic coconut oil – mixing gently until all is nicely combined.
  4. Take the above mixture in your bowl and gently place the mixture over the fruit.
  5. Bake for around 20-25minutes in the middle or lowest part of your oven – it will burn if it is too close to the top – or until the topping is browned.
