A perfect treat for a summers day – this ice-cream can be used just like regular ice-cream so get the kids to help, and then why not pop a scoop onto a gluten free, sugar free ice-cream cone and see how much they enjoy it!

*** You Will Need ***

  • 4-5 medium sized ripe organic bananas
  • 1-2 tablespoons of water / almond milk (if it is struggling to blend)
  • vanilla pod powder (optional)
  • carob or chocolate powder (optional)

*** How To Make ***

  1. Take a large flat baking tray, like below, and line it with non-stick baking paper.
  2. Cut the bananas into slices and place on the tray. Cover with foil or cling wrap and freeze for 10-12 hours.
  3. Next, take your blender and add the water or almond milk – you do not have too but it will ensure your banana pieces actually blend.
  4. Place the banana pieces into the blender, plus the vanilla powder if you are using it, and blend.
  5. Keep scraping the sides down and then return to blending on medium power.
  6. After 3-4 minutes of blending you will have made frozen banana ice-cream with a hint of vanilla!

So now you have your delicious one ingredient banana ice cream with a hint of vanilla throughout, why not go experiment with the following flavours:

  • fresh strawberry coulis
  • dark organic chocolate chunks
  • peanut butter

All you need to do, is add the following ingredients at the time you are about to blend your bananas!

For those that are curious, the blender I used was a humble Phillips one, and this recipe will give you 6-7 scoops of ice cream.
