nutty chocolateThis recipe is from the book: “Rawlicious’ by Peter and Beryn Daniel. It is such a fantastic book for those of you looking for a few simple ways to add some different but healthy meals into your day, or for those looking to embark on a raw-foodist lifestyle.
Having had this book for over a year now, I have used many of the recipes but never made the raw chocolates. For those who want to know what is RAW – it is where the food is never heated above 47 degrees Centigrade, as this is believed to destroy all enzymes needed to help digest the food components, and depletes the levels of nutrients contained within the food. That is the reason we eat after all!

Here is the recipe for RAW Organic Nutty Chocolates:

200g cacao butter, melted
1/2 cup of organic almonds
1/2 cup organic coconut oil, melted
1/2 cup raw agave (or honey which is what I used)
2 cups of organic cacao powder
Seeds of 1 organic vanilla pod

Melt the butter in a double boiler, or over a pot of water at a low temperature.
Put the melted liquid into your power blender. Add the melted coconut oil, agave (or honey) and vanilla seeds, and blend.
Slowly sieve the cacao powder into the mixture and blend on low speed until everything is combined. All the ingredients can be mixed through by hand if you do not have a power blender.

Pour into chocolate moulds or ice trays and allow to set in the fridge.
*OPTIONAL: Add a couple of almonds to each separate mould once you have poured the chocolate into the moulds.
These are great for people who are lactose intolerant as they do not require milk to be added.

RESULT:
I was really happy with how mine came out, they were quite dark so gave off a rich bitter taste. So next time I will make them in small moulds as you really only needed 2 of mine as they were so big!
