Sometimes you just need something sweet. Even as a nutritionist – I won’t lie. So, what I do is reach for easy and quick to make recipes that give you that sweet taste but its ok, because you made it from scatch with good quality healthy ingredients.

Today, I am going to show you how to make a basic gluten free, dairy free cake that uses organic coconut palm sugar as a substitute for regular cane sugar too. This cake is perfect on its own, or you can dress it up and serve it with some dairy free ice cream or warm organic melted chocolate. Go on… spoil yourself, it is the weekend after all!

Time to make: 5 minutes

Time to bake: 10-12 minutes

Serves: 4-6 people

**** INGREDIENTS ****

  • 250g organic brown rice flour
  • 2 cups of organic homemade almond milk
  • 1 scoop of Sun Warrior vanilla rice protein powder (0ptional)
  • 2 organic eggs
  • 6 teaspoons of organic raw cacao powder
  • 1/2 cup organic coconut palm sugar
  • 3/4 teaspoon of gluten free baking powder (preferably aluminium free too)
  • 3 tablespoons of organic coconut oil
  • 1/2 cup of crushed whole almonds (I crush mine by using a flat knife on top of them placed on a chopping board, like you are popping garlic ourtof its shell)
  • 1/2 cup of organic coconut flakes

**** RECIPE ****

  1. Pre-heat your oven to 200 degrees centigrade.
  2. Mix all ingredients bar 1 teaspoon of coconut oil in a glass mixing bowl. Ensure the mixture has a smooth and creamy consistency with no lumpy bits or flour showing. But do try not to over mix it, as you want it to rise a little.
  3. If the mixture looks a little dry, do add a little more almond milk as this will not taste nice once it has been cooked if it is dried out on the inside.
  4. Use the remaining 1 teaspoon of coconut oil (or less) to grease a quiche tin.
  5. Fill the quiche tin with the contents of your mixing bowl.
  6. (Optional step) Top with a sprinkle of coconut flakes, and decorate the edge of the cake with whole almonds running around the edge in a circle.
  7. Bake for 10-12 minutes – ensuring the outside is cooked which will be slightly hard and cracked, with the inside still moist.
  8. Serve it with dairy free organic coconut ice cream or melted organic dark chocolate. Bon appetit!

Remember, even though this is a healthy cake it should still be enjoyed in moderation.
