Making a quiche is really easy to do with these step by step instructions. Quiche is also a great way to use vegetables about to turn or left over scraps. It makes a change to making a soup out of your scraps! This recipe serves 4-6 people depending on the size, and takes 20minutes to make (including the base), and takes between 35-45minutes to bake.

Once you have made your quiche base, you need to choose your ingredients. For this recipe pictured here I used:

  • 1 roughly chopped organic cauliflower
  • 1 medium sized organic sweet potato (I used a left over one and simply discarded the skin)
  • 2-3 cups of organic spinach
  • 3 organic regular sized eggs
  • 250ml of organic coconut milk

Next, crack all your eggs in a large mixing bowl and whisk the eggs with a fork until the yolk has joined the egg white. Add all your vegetables and then the coconut milk, and make sure everything is nicely covered with the coconut milk and eggs. Then place the entire contents of this bowl into the already prepared fresh quiche base you made earlier. Ensure the contents are evenly spread throughout the base. Bake on 240 degrees centigrade for 35-45minutes. Enjoy!
