I am on a mission to help as many people as possible eat more vegetables. Simply because they are more nutritious than fruit (which is also easier to eat), and many people are walking around with nutrient deficiencies due to not getting in enough each day.

Beetroots might not be the most appealing vegetable to eat at first, which is why I have come up with a simple recipe to help eat more of it. This is also a fantastic recipe for your kids if you have them, to have a go at making and to learn about the importance of eating whole, fresh food.

Ingredients:

  • 4-5 medium-sized beetroots (cleaned, cooked, peeled and cubed)
  • 2-3 tablespoons tahini sesame seed paste
  • 4 tablespoons lemon juice
  • 1 small garlic clove (crushed and finely chopped)
  • 1 teaspoon lemon zest
  • salt and pepper (as desired)

Instructions:

  • Cook the beetroots in a dish with a lid on top at 190 degrees centigrade until a knife or fork can easily cut it. Remove and let them cool when cooked.
  • Place all the ingredients into a food processor or blender and pulse until smooth.
  • Adjust the taste by adding more salt and pepper or lemon juice if desired, or perhaps more tahini.
  • Eat immediately or store in the fridge. Can also be frozen for 1 month.

How to enjoy your tasty homemade beetroot hummus

Your delicious beetroot hummus can be enjoyed:

  • spread onto bread as part of a sandwich,
  • use as a dip for crackers,
  • use as a topping in a bunless burger,
  • drizzle over a salad,
  • wherever you feel it would add a great addition to enhance a meal or add a nutritious boost!

  • They are full of vitamins, minerals, inorganic nitrates and pigments which are known to be great for health,
  • They can help lower blood pressure naturally due to the nitrates they contain,
  • The same nitrates can boost stamina and performance in professional sports persons,
  • The betalains they contain can help calm inflammation,
  • They can boost digestive health and brain health.
