OK, I get it. Quinoa is not everyone’s cup of tea. But believe me when you try this recipe – you will find a place for it in your weekly menu! Packed full of sweetness, this healthy recipe is too good to say no to!

*Serves 1 – 2 people

***INGREDIENTS***

  • Handful of halved organic pecan nuts
  • 1 cup of organic quinoa grains (uncooked)
  • 1 cup of freshly made organic almond milk
  • 1 cup of purified water
  • 1 tablespoon of organic coconut sugar (I used Biona’s)
  • Half a punnet of organic fresh blueberries
  • 1 tablespoon of organic ground cinnamon powder
  • 1 tablespoon of Sweet Freedom cooking syrup (this is made from apples, grapes and carob only)
  1. Start off by thoroughly rinsing the raw quinoa grains in a fine-holed sieve, under clean purified water. *This step is the key to making the quinoa taste delicious.
  2. Then, add the water, almond milk and quinoa grains to a stainless steel small cooking pot and bring the contents to the boil.
  3. Once this has come to the boil turn down to a medium – low heat for around 15minutes. Stirring occasionally.
  4. Once the quinoa has ‘popped’ (little tails have come formed on the grains), and their is hardly any liquid left your quinoa should be ready. (I always take a small teaspoon and ensure it is done by making sure it is not crunchy which means it is not quite cooked properly.)
  5. Next add all the other ingredients and stir.
  6. Serve in a bowl for 1 if you are quite hungry, or split into two. Add a little more almond milk if you want the texture to be a little more creamier. Bon appetite!

This meal is great for a healthy high protein breakfast for vegans and even carnivores. Or it even works as an afternoon snack, lunch or even a desert with a little grated organic Braeburn apple in.
