If you are a sucker like me for something sweet, then making this recipe and ones like it with similar ingredients, will go a long way in satisfying you. I love making this dessert because not only is it easy and super tasty – but super healthy too!
Serves 4 people (if using small dessert cups like pictured)
Ingredients:
- 2 small ripe organic avocado pears
- 1 tablespoon of organic raw cacao powder or carob powder
- 1/2 cup organic homemade almond milk
- 8 organic medjool dates (de-stoned)
- the cream ONLY from an entire tin of organic coconut milk *I use Waitrose own Organic Coconut Milk as there’s always has coconut cream that has set solid at the top of the tin.
- 1 tablespoon of organic vanilla bean extract or powdered vanilla bean
- 1 tablespoon of organic coconut palm sugar
- 4 tablespoons of fresh organic orange zest
How to make:
- Blend all ingredients together (except the orange zest) until smooth in either a blender or a food processor. Try to use as little liquid as possible.
- Divide into 4 small dessert bowls or cups – topping each with a little orange zest.
- Leave in the fridge for approximately 30minutes and serve chilled.
