Vegan Coconut Covered Date Balls

This delicious healthy ‘naughty treat’ recipe is taken from South African Natural Health Advisor - Mary Ann Shearers book ‘The Natural Way’. I picked this book up second hand from the I Heart Market that I went too about 2 weeks back. This was the second time I have been to this market, and I also picked up a vegetarian cook book.

Mary’s Date Ball Recipe

Place equal quantities of oats, coconut (the finely ground variety) and dates in your food processor fitted with a steel blade and blend until the dates are chopped evenly. (I used my blender and this worked fine!)

 Add a bit of filtered water to form a pliable ‘dough’. Roll into balls (children love rolling these themselves) and dip in coconut. (I covered them in coconut all over!)

Place on a plate or eat straight away.

I must say I love how simple she writes out her recipes! The only thing I found was the dates when finished were too gloopy to be enjoyed, so I refrigerated them for approximately 2 hours and this made them perfect healthy sweet snacks! This recipe is great for those who are vegetarian or vegan.
